Why is Salade crudites Jambon Emmental classified as ultra‑processed (NOVA 4) and which additives does it contain?

The salad combines many processed components, cooked egg, cured ham, cheese, a formulated vinaigrette and stabilisers, and lists seven additives on its label: sodium nitrite (E250), acetic acid (E260), sodium acetates (E262), sodium erythorbate (E316), potassium lactate (E326), citric acid (E330) and xanthan gum (E415). Their presence, together with the multiple industrial steps, places the product in the ultra‑processed NOVA 4 category.

How do the sugar and salt levels in this salad affect a diabetic or hypertensive diet?

With 2.2 g of sugar per 100 g, the salad is relatively low in sugar and can fit within a controlled‑carbohydrate plan for diabetes, but portion size should still be considered. The salt content is 0.53 g per 100 g, which is modest compared with many processed foods, yet it still contributes to daily sodium intake and should be accounted for in a hypertension‑friendly diet.

Is this salad suitable for vegan, keto, halal, or gluten‑free diets?

No, the salad is not vegan because it contains ham, cheese and egg; it is not halal due to the pork ham and associated curing agents; it is not strictly keto as it provides 2.7 g of carbohydrates and includes added sugars; and although the label mentions possible traces of gluten, it cannot be guaranteed gluten‑free, making it unsuitable for strict gluten‑free diets.
