Why is Die Ofenfrische Speciale classified as ultra‑processed (NOVA 4) and what specific additives does it contain?

The pizza is labelled NOVA 4 because its formulation relies heavily on industrial ingredients and a long list of additives. It contains preservatives such as sodium nitrite (E250), antioxidants like sodium ascorbate (E301) and rosemary extract (E392), acidity regulators calcium phosphate (E341) and calcium citrate (E333), stabilisers diphosphate (E450) and triphosphate (E451), an emulsifier (E472e), and a raising agent sodium bicarbonate (E500ii). These substances, together with processed meats and cheese, give the product its ultra‑processed status.

How does the sugar and salt content in this pizza affect a diabetic or hypertensive diet?

Each 100 g portion provides 2.7 g of sugar, which is below the average for frozen pizzas but still contributes to total carbohydrate intake that must be counted by people with diabetes. The 1.3 g of salt (≈0.52 g sodium) is moderate; for those managing hypertension it represents a notable share of the recommended daily sodium limit, so portion control is advisable.

Is the wheat flour in this pizza a concern for people with gluten intolerance?

Yes. Wheat flour is the primary source of gluten in the product, and the allergen information lists gluten explicitly. Anyone with celiac disease or non‑celiac gluten sensitivity should avoid this pizza.
