Mortadella is a traditional Italian cured sausage made from 94% pork, gluten‑free and packaged in plastic, produced in Italy. Nutritionally it supplies 15 g of protein per 100 g but also contains 27 g of fat (10 g saturated), 1.8 g of salt and 303 kcal, resulting in a Nutri‑Score of E and placement in NOVA group 3. The formulation includes pistachios, sodium nitrite as a preservative and sodium ascorbate as an antioxidant, which may be concerns for some consumers.
