Why is Paëlla Royale classified as ultra‑processed (NOVA 4) and which additives does it contain?

It is made from many processed ingredients, including cooked mussels, pre‑cooked shrimp, cured chorizo, and a flavor‑enhancing sauce, combined with added stabilisers, colourants and preservatives; the label lists E100 (turmeric), E160c (paprika extract), E415 (xanthan gum), E330 and E331 (citric and phosphoric acids), E223 (sodium disulfite) and E250 (sodium nitrite) as its main additives.

How do the sugar and salt levels in Paëlla Royale affect a diabetic or hypertensive diet?

With only 1.5 g of sugar per 100 g, the dish contributes little to daily sugar limits, but its 0.75 g of salt per 100 g (≈300 mg sodium) is relatively high for a single serving and may challenge sodium‑restricted diets for hypertension.

Is the mussel component in Paëlla Royale a concern for people with shellfish allergies?

Yes; the product contains 5 % whole cooked mussels and also includes shrimp and crustacean extracts, so it must be avoided by anyone allergic to shellfish.
