Why is Sandwich thon oeuf crudites XXL classified as ultra‑processed (NOVA 4) and what specific additives does it contain?

It is classified as NOVA group 4 because the formulation combines several industrially processed components such as whole‑meal bread, reduced‑fat mayonnaise, tuna in brine and seasoned vegetables, and it includes three listed additives: E260 (acetic acid) for preservation, E330 (citric acid) for acidity regulation, and E412 (guar gum) as a thickener, all of which are typical of ultra‑processed foods.

How does the sugar and salt content in this sandwich affect a diabetic or hypertensive diet?

With 2.6 g of sugars and 0.95 g of salt per 100 g, the sandwich provides a modest sugar amount that can fit within daily limits for diabetics when the rest of the diet is low‑sugar, while the salt contributes about 15 % of the WHO’s recommended maximum of 5 g per day, so individuals with hypertension should consume it sparingly.

Based on its ingredients, is this sandwich suitable for vegan, keto, halal, or gluten‑free diets?

The sandwich contains tuna, egg yolk, wheat‑based bread and mustard, making it unsuitable for vegan, gluten‑free and strict halal diets (the tuna is not certified), and its carbohydrate level (26 g per 100 g) and total fat (6.2 g) exceed typical keto limits, so it is best suited only for omnivorous diets without those specific restrictions.
