Why is Old El Paso fajita kit classified as ultra‑processed (NOVA 4) and what specific additives does it contain?

The kit is listed as NOVA 4 because it combines many industrially produced ingredients such as refined starches, modified corn starch, xanthan gum and multiple flavor enhancers, and it undergoes extensive processing to create ready‑to‑cook tortillas and seasoning mixes. The label reports five food‑additive codes: E150a (plain caramel colour), E330 (citric acid), E415 (xanthan gum), E471 (mono‑ and diglycerides of fatty acids) and E509 (calcium chloride).

How does the sugar and salt content in this fajita kit affect a diabetic or hypertensive diet?

At 6.4 g of sugars per 100 g, the kit provides more carbohydrate sweetness than the average meal‑kit, which can raise blood‑glucose levels and should be counted within a diabetic meal plan. The salt level of 2.31 g per 100 g is moderate; it contributes significantly to daily sodium intake and may be too high for strict hypertension control, so individuals should limit portion size or balance it with low‑salt foods.

Is the hydrolysed soy protein in this product a concern for people with soy allergy?

Yes. Hydrolysed soy protein is derived from soy and is listed among the ingredients, so the product must be avoided by anyone with a proven soy allergy despite being labeled gluten‑free.
